This is my new favorite snack. It only takes 10 to 15 min to make. You don't need an oven, the will last without refrigeration and I can carry them with me anywhere. A little sweet, a little crunchy and good for me!! This recipe is also easily customizable!
2 cups oats ¼ cup pumpkin seeds ¼ cup almonds ¼ cup milk chocolate ½ tsp vanilla extract ¼ tsp salt ⅓ cup peanut butter ⅓ honey ¼ raisin/ cranberry mix
In a large bowl, add all dry ingredients and stir just to combine.
Then add the vanilla extract, peanut butter and honey. Stir until thoroughly mixed.
For thin bars, line an 8 inch square pan with plastic wrap. Put the mixture in the pan and press it down until compact and even.
Pop in the freezer for 8 to 10 min to cool slightly.
Remove from freezer and cut into 8 equal bars.
Enjoy!! I keep mine individual in 3 ½ X 5 ⅞ In bags (8.8cm X 14.9 cm). However any size ziploc bags or wrapping them in plastic wrap works well.
*** Feel free to use this as a base and substitute anything for like items. For instance, if you are gluten free, you can use Bob Red Mills gluten free oats. Perhaps you like flax seeds or wheat germ. Take a portion of the oats out and substitute it with one of those. If you prefer dark chocolate(which is better for you) to milk. Or perhaps you like almond butter or cashew butter. Don't be afraid to make this recipe your own!
